Christmas Cake

You might say Christmas cake now? Christmas is still four months away.Yes I say now so it has time to mature into the cake it should be.

I share with you today a very old recipe which has been passed down through 4 generations.

Ingredients :

 1 kg mixed fruit
60 g Glace Cherries
125 ml + Brandy
110 g butter
110 g Castor Sugar
110 g Brown Sugar
5 eggs
550 ml (265 g) cake flour
5 ml Bi-Carbonate of Soda
pinch of salt
5 ml mixed spice
60 g whole Almonds

 Method :

Soak fruit in Brandy for 2 days or more.

Cream butter, brown Sugar and Castor sugar – well.

Add eggs one at a time mixing in well.

Sift flour,bicarbonate of Soda, salt and mixed spice.

Add dry to butter/sugar mix a little at a time, alternating with fruit mix.

Turn into cake tin lined with wax paper. Newspaper on the outside of the tin.
Cook 3,5 hours on 259 F or 130 C. Start testing after 3 hours.

Tips :
If butter and egg curdle – add some flour.
Peel of wax paper, add Brandy and wrap in a Tea towel and then in newspaper. 
Feed with Brandy often

After working the in the garden, one’s hands are normally really dirty. Here is an organic recipe to make your own “Gardener’s Hand Scrub”. Not only will it clean your hands perfectly, it will leave them soft, moisturized and smelling good.

Make your own Gardeners hand scrub with natural ingredients and herbs from your garden!

Adjust recipe if needed, this all natural recipe can be modified with different herbs from your garden, keeps well!

Mix together the following ingredients to form a nice, thick paste.

1) 2 – 3 tablespoons olive oil
2) handful of sugar (I use raw sugar)
3) kosher salt or sea salt
4) 1 tsp fresh chopped rosemary or mint, or both
5) 1-2 dried orange or lemon peels, grated (or zest of fresh citrus if you don’t have dried)
6) 2 – 3 tablespoons dried or fresh chopped lavender
7) grated knob of bar soap (optional)
8) smashed up handful of almonds or other nut on hand (optional)
9) 1 glob of honey

Mango Smoothie

You will need :

1 frozen banana

1/2 ripe Mango

4 Almonds

few dried Cranberries

2 tbsp plain yoghurt

50ml water

Place all ingredients in blender, blend till smooth.

Pour into glasses and serve .

Enjoy!

The easiest carrot and beetroot salad

I always grow excess beet-roots and carrots just so I can make this wonderful salad in a jiffy.

You will need :

equal portions of carrot and beetroot, peeled and grated

a dash of Olive Oil, salt, tamari or soy sauce, crushed almonds, goji berries or raisins or dried cranberries.

Mix all ingredients throughly. Surely a color and taste sensation.

This salad improves with age stored in the refrigerator.
